Do Air Fryers Cause Cancer?

No. There is no evidence that air fryers cause cancer. An air fryer is a small convection oven — a fan and a heating element — and it introduces nothing to your food that an ordinary oven does not. The concern people have read about is real but narrower than the headline: acrylamide, a compound that forms when starchy foods are browned at high heat in any appliance. It is a general dietary matter, not an air-fryer one, and health agencies treat it exactly that way.

What acrylamide actually is

Acrylamide forms when starchy foods — potatoes, bread — are cooked at high, dry heat above about 120°C, through the same browning (Maillard) reaction that makes them tasty and golden. It is created by browning, not by any particular machine: it forms when you roast, bake, toast, deep-fry or air-fry the same foods. The US FDA, the UK Food Standards Agency and the US National Cancer Institute all classify it as a general dietary consideration and advise the same simple habits, rather than singling out any appliance.

What the health agencies say

The guidance is consistent and undramatic across all three. The National Cancer Institute notes that acrylamide is a laboratory carcinogen at high doses in animals, while human dietary studies have not established a clear link at the levels people consume — the evidence is a reason for moderation, not alarm. The FDA and the FSA both frame the practical response as diet-wide: cook starchy foods to a golden rather than a dark brown, do not over-crisp, store potatoes out of the fridge, and vary what you eat. The FSA campaign is literally called “Go for Gold.” None of them tells you to stop using an oven or an air fryer.

Why an air fryer can actually help

Two reasons. First, visibility and control: browning is easier to watch and stop in an air fryer than in a pot of oil, so hitting golden rather than dark is simpler. Second, oil: air frying uses far less oil than deep-frying for a similar result, which lowers a separate set of concerns tied to reheated frying oil.
