What bread needs that reheating does not

Height.A loaf rises. If it clears the tin by three inches, it needs three inches of clearance before the top element scorches the crust while the crumb is still wet. This is the most common countertop-oven failure with bread, and it is almost never published — which is why an oven that gives you a real cubic-foot figure earns its place here. The Cuisinart TOB-260N1's published 0.95 cubic feet is not just marketing volume; it is enough height for a standard loaf to finish.

A low, stable floor. Proofing wants a steady 80–100°F and many ovens simply cannot hold a temperature that low — the element cycles too coarsely at the bottom of the range. A genuine proof setting runs the element at a low enough duty cycle to hold the number, which is harder than getting hot. The Breville Smart Oven Pro earns its second place here specifically on that: it has a real proof and slow-cook capability rather than a low setting that overshoots.

Element control. Bread wants more heat from below early, to drive oven spring, and less from above late, so the crust does not set before the loaf has finished rising. Independently driven elements do this; two elements switched together do not. That is the mechanical reason these two ovens bake bread better than a $60 box, and it is the one thing you genuinely cannot retrofit.

Both picks draw 1,800 watts and cost the same to run as any oven on the site — the premium buys control over the heat, not less of it. Only two ovens made this list because only two publish enough to be confident they clear all three bars. We would rather name two we can stand behind than pad the page.
