What a convection oven is actually for

The argument for a countertop convection oven is efficiency of scale: a full-size wall oven heats roughly five cubic feet of air before it can cook anything, and a countertop model heats around one. For a tray of vegetables or a single loaf, the small oven reaches temperature faster, spends less getting there, and does not turn the kitchen into a room you avoid in summer. We costed that difference out, and it is real.

What decides whether one bakes well is not power — nearly all of these are 1,800 watts — but three things the marketing rarely leads with: usable interior height for things that rise, a temperature floor low enough to proof and slow-roast, and elements that can be driven independently. The Cuisinart TOB-260N1tops this list because it is the only oven here whose manufacturer publishes both a wattage and an interior volume in cubic feet on the same page, which makes it the easiest to reason about and within five percent of a Breville Pro's interior for a good deal less.

Reading the order

The Breville Smart Oven Prosits second because it is the range's convection oven with the air-fry layer removed — a genuine proof and slow-cook capability, and the wattage published on the product page. The Oster French Door and the Elite Gourmet earn their places on published interior volume in liters and quarts respectively, though both cost you a wattage figure to get it. Every card names the trade: the big cheap ovens give you room and take away documentation, and the well-documented ovens cost more and hold less.

Is a countertop convection oven good enough to replace my oven?
For anything that fits on one tray, usually yes — and it will cost less to run and heat the kitchen less. For a turkey, a large roast, or two dishes at once, no. The honest answer is that it replaces the jobs, not the appliance. We work through which jobs.
What does convection actually change when baking?
The fan moves air past the food, which strips the still, humid layer off the surface and makes heat transfer faster — so a convection oven cooks quicker than the same oven with the fan off. The standard adjustment is about 25°F lower or a fifth less time. The conversion table is here.
