Air Fryer Materials, Without the Panic
A calm walk through what is actually in the cavity: the coatings, what they degrade at, and how to minimize them if that is your priority. The worry is real; most of what is written about it is not.

What is actually in there
Three materials cover almost every air fryer and oven-style air fryer: PTFE non-stick, ceramic non-stick, and bare stainless steel. Knowing which is which, and what each does at temperature, is enough to make an informed decision — and it is far less alarming than the search results suggest.
PTFE(the family that includes Teflon) is the most common non-stick coating on baskets and crisper trays. Its relevant property is thermal stability: it is stable through normal cooking temperatures and only begins to degrade well above them — hotter than an air fryer's thermostat normally permits. The historical concern was PFOA, a processing aid that has been phased out of cookware manufacturing; modern coatings are made without it. Damaged or flaking coating is a reason to replace a basket, but intact PTFE at cooking temperatures is not the hazard the scary framing implies.
Ceramicnon-stick is a silica-based coating marketed as the “clean” alternative. It contains no PTFE, which is its selling point. The trade is durability: ceramic coatings tend to lose their non-stick property faster with use. Whether that is worth it depends entirely on how much the PTFE question worries you.
Stainless steel is the interior of most oven-style air fryers, and bare steel is the racks. It has no coating to degrade at all. This is the reason an oven-style air fryer is inherently lower-coating than a basket model: most of your food sits on a steel rack in a steel box.
How to minimize coatings, if that is your priority
- Choose an oven-style air fryer over a basket model. Bare-steel interior, steel racks, and the only coated part is usually the crisper tray — which you can replace with a plain steel one.
- Swap the crisper tray for a stainless or steel-mesh one. Universal replacements are inexpensive and eliminate the last coated surface.
- Do not use metal utensils on any coating, and replace anything that flakes. Intact coating and damaged coating are different situations.
