Convection vs Conventional Oven

The only difference is whether the fan runs. That one change makes cooking faster and more even — and means a conventional recipe needs adjusting, which is the source of most 'my new oven burns everything' complaints.

The fan, and what it changes

A conventional oven heats with elements and lets the hot air rise and fall on its own. A convection oven adds a fan that circulates that air. Moving air transfers heat faster and more evenly, because it strips the still, humid layer off the surface of the food and replaces it continuously. That is the whole difference, and it produces three effects: faster cooking, more even browning across the oven, and better results on anything you want crisp or well-browned.

The catch is that faster cooking means a conventional recipe will overcook — or appear to “burn” — if you follow it unchanged. The standard adjustment is to lower the temperature by about 25°F or shorten the time by roughly a fifth. When to turn the fan off

Convection is not always better. Delicate items that set as they rise — soufflés, some cakes, custards — can be disturbed by the moving air, and anything you want to stay moist on top can dry out faster. For those, conventional (fan off) is the right choice. For roasting, crisping, browning, and cooking several trays at once, convection wins.

The decision rule

Use convection for roasting, vegetables, anything crisp, and multiple trays at once — and drop the temperature about 25°F. Use conventional (fan off) for delicate bakes that rise and set, and anything a moving-air draft would disturb or dry out. A good oven lets you choose per dish; that flexibility is what you are buying.

No. Convection is better for roasting, crisping, browning and cooking multiple trays, because the fan moves heat faster and more evenly. Conventional is better for delicate bakes that rise and set — soufflés, some cakes, custards — where the moving air can disturb them. The best ovens let you switch per dish.
